Rehydrating Dried Red Chile

Here is a quick outline of how to rehydrate dried red chile:

  1. Select a dozen or so dried chile pods that aren't cracked or damaged and drop in warm water. Don't touch your eyes or face if you aren't wearing gloves. It'll burn!
  2. Remove the stems, and seeds but be sure to leave the veins behind as theat's where the heat is.
  3. Place the clean pods in a pan and boil in two cups of water.
  4. As the chile boils, it will re-hydrate and become fleshy and plump again. If not fully rehydrated after 10 minutes, take it off the burner and let it steam for another 10-15minutes.
  5. Use the rehydrated chile to make enchilada sauce and enjoy!
