There are
hundreds of Southwest cookbooks around, but ours is different. First of
all, it consists mainly of recipes using New Mexico Red and Green Chile, and
it details some essential basics for cooks who are new to cooking with chiles.
We avoided stuffing it with
recipes which used chile as an ingredient just for the sake of using chile...i.e."broccoli
with chile peppers"etc. Second, we've included a video to go
along with the book. It's not only a "how-to" for some of the basic aspects
of dealing with chile peppers, but also introduces you to the heart of New Mexico's chile
country, where we are fortunate to live!

The Cookbook
- This neat little spiral-bound book contains more than 50 recipes. It includes classic dishes using
red or green chiles, a selection of favorite side dishes, and a "Nuevo" section
featuring newer uses of chile. ("Classic" to us means recipes which do not
contain hamburger meat or Cream of Anything soup!
The
Video - Professionally produced, about a half-hour long, the video
shows step-by- step how to roast green
chiles at home, and how to make red chile sauce from dried chile pods. We show the
preparation of several favorite classic recipes from the cookbook, then take
you along on our travels to the Hatch Chile Festival and The Whole Enchilada Fiesta in Las
Cruces, two annual events which are the high points in any chile lover's year!
