Ingredients:
1/2 cup all-purpose flour
1/2 tsp. freshly ground sea salt
1/2 tsp. freshly ground pepper
2 Tbs. cold skim milk
3 Tbs. olive oil
4 green tomatoes, sliced 1/4-inch thick
1/4 cup minced fresh dill, chives, or basil
2 lemons, cut into wedges
Preparation:
In a small bowl, combine the flour, salt, and pepper. Pour the skim milk into another small bowl.
In a large skillet, heat the oil over medium heat.
Dip each tomato slice into the milk and then the flour. Fry the slices in the hot oil until golden, about 5 minutes, turning once or twice. Drain on paper towels.
Garnish with the dill and serve immediately with lemon.
