Vegetable Quesadillas

Ingredients:
1 can (10 3/4 oz.) condensed cheddar cheese soup
1/4 cup milk
1 medium tomato, chopped (about 1 cup)
1 medium green pepper, chopped (about 3/4 cup)
2 green onions, sliced (about 1/4 cup)
1 fresh or canned jalapeno pepper, seeded and finely chopped (about 1 Tbs.), optional
6 (6-inch) flour tortillas
Sour Cream
Salsa

Preparation:
In medium bowl, combine soup, milk, tomato, green pepper, onions and jalapeno pepper.

On two large baking sheets, arrange tortillas. Top each tortilla with about 1/3 cup soup mixture, spreading evenly to within 1/2 inch of edge.

Bake at 400 degrees F for 10 minutes or until hot and tortillas are crisp.

Serve with sour cream and salsa. If desired, garnish with green onion and fresh hot chili pepper.
