
Steamed Artichokes with Spicy Red Chile Aioli
Ingredients:
2 large artichokes
1 cup mayonnaise
4 Tbs. red chile or cayenne pepper (powdered)
3 Tbs. minced garlic
Salt and pepper
Preparation:
Combine the mayonnaise, garlic, and chile in a small mixing bowl. Salt and pepper to taste. Chill while artichokes are cooking.
Cut stems from artichokes close to the base of the leaves. With scissors, trim the tops of the artichoke leaves to remove the prickly tips. With a sharp knife cut a small shallow X in the bottom of each artichoke.
It is my preference to steam the artichokes in a steamer but if not available the artichokes may be placed in a pot of boiling water and covered with a wet towel. This will keep the entire artichoke submerged.
Test the artichoke by removing a single leaf and checking the tenderness. The meat should be easily removed when the artichoke is done. This will take approximately 40 minutes.
