
Basil Vegetable Medley
Ingredients:
1 Tbs. vegetable oil
3/4 lb. fresh asparagus spears (about 12 to 15) trimmed and cut into 1-inch pieces
2 medium carrots, thinly sliced (about 2/3 cup)
1/4 tsp. dried basil leaves, crushed
1 cup sliced fresh mushrooms
1 cup (10 3/4 oz.) condensed cream of asparagus soup
2 Tbs. milk
Preparation:
In saucepan over medium heat, in hot oil, cook asparagus, carrots and basil until tender-crisp, stirring often.
Add mushrooms; cook until tender, stirring often. Stir in soup and milk. Heat through.
Garnish with carrots and fresh thyme.
