
Caraway Crackers
Ingredients:
1/2 cup whole wheat flour
1/2 cup rye flour
1/2 cup all-purpose flour
2 Tbs. packed brown sugar
1 1/2 tsp. whole caraway seed
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/4 cup butter flavored shortening
1/2 cup milk

Preparation:
Preheat oven to 300 degrees F. Lightly grease baking sheets. Set aside.
In medium mixing bowl combine wheat, rye and all-purpose flour, brown sugar, caraway seed, baking powder, baking soda and 1/4 teaspoon salt. Cut in shortening to form coarse crumbs. Add milk, mixing with fork until particles are moistened and cling together. Form dough into ball.
On floured board, lightly knead for about 3 minutes, or until smooth. Roll dough 1/8 to 1/16 inch thick. Cut shapes with 2-inch round cookie cutter. Place on baking sheet. Prick each cracker with fork 1 or 2 times. Sprinkle tops with salt.
Bake at 300 degrees F for 25 to 30 minutes, or until deep golden brown and firm to the touch. Remove to cooling rack. Cool completely.
Store in covered container.
