
Sautéed Oysters with Basil
Ingredients:
8 Easter or 6 medium-size Pacific oysters (usually sold in jars)
All-purpose flour
2 Tbs. butter or margarine
1/2 tsp. dry basil
2 Tbs. dry white wine
Preparation:
If in shells, cut oysters free and remove. Gently pat oysters dry. Dredge in flour and shake off excess.
Place wok over medium-high heat. When wok is hot, add butter. When butter has melted, add oysters and sprinkle with basil. Stir-fry oysters gently for about 4 minutes. Arrange on a serving dish or place each oyster in a half shell; keep warm.
Add wine to wok and stir up browned particles. Spoon liquid over oysters.
