
Pineapple Salsa Olé
Ingredients:
2 cups cubed fresh pineapple or canned pineapple chunks packed in pineapple juice, drained
1/3 cup finely diced white onion
2 Tbs. fresh lime juice
2 fresh jalapeno peppers, seeded and minced
1/2 small red bell pepper, diced
1 Tbs. brown sugar
1 Tbs. orange liqueur such as Triple Sec or substitute undiluted frozen orange juice concentrate
2 tsp. rice wine or white wine vinegar
1 Tbs. fresh cilantro, chopped
Preparation:
Combine all ingredients in a medium non-reactive saucepan. Simmer over low heat about 20 minutes.
Serve warm with grilled meat, poultry or fish.
