
Chicken Taquitos
Ingredients:
12 (6-inch) corn tortillas
1 lb. boneless, skinless chicken, cooked and shredded
1 package taco seasoning
1/2 cup hot water
1/2 cup minced green onion
1/4 tsp. garlic powder
1/4 tsp. parsley
Vegetable oil, for frying
Guacamole
Preparation:
Sprinkle tortillas lightly with water; wrap in foil and place in 200 degree F oven for 10 minutes. Leave in foil until ready to use.
In large skillet, mix together chicken, taco seasoning, water, onion, garlic powder, and parsley. Bring to a boil over medium high heat; reduce heat to low and cook for 10 minutes until chicken is no longer pink.
Place 2 tablespoons chicken mixture down center of each warmed tortilla. Roll up tortillas tightly; secure with toothpicks.
In deep, large saucepan, heat oil to 375 degrees F. Fry rolled tortillas in oil until golden brown and crisp. Drain well on paper towels.
Keep warm in oven; remove toothpicks before serving.
Serve with guacamole.
